Advice before starting sit on the dog/lead training

We have recently adopted a 2 year old American Bulldog. He is really gentle and very well mannered, but gets really excited when we grab our shoes or the lead and will pull a little at the start of his walk, and also pulls A LOT around other dogs, so I'm going to start with sit on the dog training and just had a few questions before we did:

What do we do once we finish a session of training? Do we reward him with a treat and/or praise? Or just let him go?

How long after doing a session do we wait before walking him that day?

This is probably a more nebulous question, but how long do we the the training for? Just until we see the results we desired, or should we continue beyond that? And are dogs known to regress after stopping with training?
